Yogurt & Citrus Olive Oil Chicken
If you’ve never marinated in yogurt before, you’ll be very pleased with the results. The chicken will end up incredibly moist and the garlic and citrus flavors really come through. Make sure it’s a Greek style yogurt, which is available at most grocery stores now.
1/2 cup nonfat Greek style yogurt
4 cloves garlic, crushed
1 tablespoon fresh lemon juice
Salt and pepper
2 tablespoons Pasolivo Citrus olive oil
4 chicken cutlets
In a medium bowl, mix together all ingredients. Add the chicken and turn to coat. Refrigerate for at least 30 minutes and up to two hours.
Heat 1 tablespoon of Pasolivo Citrus olive oil in a large skillet over medium heat. Wipe the excess marinade off the chicken and cook until golden brown and cooked through, about four minutes per side. Alternately, you can grill these, taking care not to overcook.
