Lemon Olive Oil Biscotti

Ingredients:

3/4 cup Lemon olive oil
3 & 3/4 cups all purpose flour
2 tsp baking soda
1/8 tsp salt
1 cup sugar
3 whole eggs
1tsp vanilla extract
1/2 tsp almond extract
1/2 cup toasted almonds (unsalted)

Directions:

Mix together flour, baking soda and salt. Whip together eggs and sugar until smooth and consistent yellow color then add Lemon olive oil, and extracts. Stir in almonds. With a wooden spoon add flour mix to egg mixture and beat until dough blends together. Separate dough into two twelve inch loafs and place on baking sheet. Place in preheated oven at 350 degrees for approximately 37 minutes and remove when dough is light brown in color. Allow to cool for 20 minutes. Slice loafs using a serrated knife width-wise approximately 1/2 inch thick and place on baking sheet, lying flat and bake for approximately 12 more minutes at 350 degrees. Cookies should be a nice golden brown with no sign of moisture.
