Lemon Olive Oil Biscotti


3/4 cup Pasolivo Lemon olive oil
3  3/4 cups all purpose flour
2 teaspoons baking soda
1/8 teaspoon salt
1 cup sugar
3 whole eggs
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1/2 cup toasted almonds (unsalted)


Mix together flour, baking soda and salt. Whip together eggs and sugar until smooth and a consistent yellow color. Add Pasolivo Lemon olive oil and extracts. Stir in almonds. Using a wooden spoon add flour mix to egg mixture and beat until dough blends together. Separate dough into two twelve inch loaves and place on a baking sheet. Place in preheated oven at 350 degrees F for approximately 37 minutes and remove when dough is light brown in color. Allow to cool for 20 minutes. Slice loaves using a serrated knife width-wise approximately 1/2 inch thick. Place slices on a baking sheet, lying flat and bake for approximately 12 more minutes at 350 degrees F. Cookies should be a nice golden brown with no sign of moisture.
