Red Potato Kale Soup
This soup is not only healthy for you but it is also delicious!
One bunch kale (exclude the spine)
2 lbs red potatoes (unpeeled)
3 tablespoons Pasolivo Extra Virgin olive oil
2 bunches green onions
2 tablespoons Pasolivo Lavender Blend
Saute one bunch finely chopped kale in Pasolivo Extra Virgin olive oil and set aside. Cube 2 lbs red potatoes (unpeeled) and bring to boil in chicken broth. Add 2 bunches of chopped green onions. When potatoes are tender, mash about half of them; then add kale and Pasolivo Lavender Blend.
