Erin's Pasta Salad

This is, hands down, the best pasta salad many of us have ever tasted. Don’t try to substitute quinoa or couscous, it doesn’t do it justice. This can be a main course, or great as a side with yogurt marinated chicken.

Dressing

Ingredients:

• 1 garlic clove, quartered
• 1 cup packed, fresh parsley
• 1/4 cup fresh lemon juice
• 1/4 cup red wine vinegar
• 1 tsp curry powder
• 1 tsp sugar
• 1/2 tsp black pepper
• 3/4 tsp cumin
• 1 cup olive oil

Directions:

Blend garlic and salt to taste in a food processor or blender, scraping down the sides occasionally. Add 1 cup parsley and mince. Blend with lemon juice, vinegar, curry, sugar, cumin and pepper. With machine or blender running, gradually add olive oil in a steady stream.

Pasta

Ingredients:

• 1 lb penne pasta
• 1 red onion, finely chopped
• 1 cup chopped, Kalamata olives
• 2/3 cup dried blueberries
• 2/3 cup toasted pine nuts

Directions:

Cook pasta until tender but still firm to the bite. Drain and rinse with cold water. Pour dressing over pasta. Add onions, olives, blueberries and pine nuts to pasta and toss. Season with salt and pepper, then cover and refrigerate for at least 2 hours or until chilled.
