These delicious Granola Pumpkin Muffins are a healthy alternative. They combine Pasolivo olive oil as well as seasonings and are perfect for the chilly weather months.
Ingredients
- 1/4 cup Pasolivo Tangerine Olive Oil
- 2 tablespoons unsweetened applesauce
- 1/2 of a 15-ounce can pumpkin puree
- 1/2 cup plain greek yogurt
- 2 large eggs
- 1/4 cup Pasolivo Orange Blossom Honey
- 1/3 cup sugar
- 1/2 cup whole wheat flour
- 1 cup all-purpose flour
- 1 1/2 teaspoons Pasolivo Sugar & Spice Blend
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 cup granola, plus more for topping
- Foil muffin liners
Preparation
- Preheat the oven to 350ºF.
- Mix dry ingredients in a bowl and set aside. Mix remaining ingredients except granola in a large bowl. After mixing well stir in dry ingredients and mix just until incorporated. Stir in granola.
- Spoon into lined muffin tins about 3/4 full.
- Press some granola on top of muffins.
- Bake about 25 minutes, until a toothpick inserted in center, comes out clean.
