The exotic flavors of our Central Coast Curry pair perfectly with the sweetness of the carrots to make this the ideal appetizer for any occasion.
Ingredients
- 2 pounds carrots, peeled and sliced to about ¼ inch
- 1 cup red onion, coarsely chopped
- 2 tablespoons Pasolivo Tuscan Extra Virgin Olive Oil
- 2 tablespoons Pasolivo Central Coast Curry
Preparation
- Preheat oven to 400ºF.
- Mix carrots and onion in a bowl. Toss with Pasolivo Tuscan Olive Oil followed by the Pasolivo Central Coast Curry.
- Place on a baking sheet in a single layer and roast for approximately 20 minutes, or until tender.
