This delicious vegetarian dish is perfect for summer parties! Serve it with tortilla chips, on tacos, or on its own as a healthy side.
Ingredients
1 cup Roma tomatoes, chopped bite-size
2 avocados, peeled and chopped
1/2 cup red onion, chopped small
1 can black beans, drained
1 can black-eyed peas or pinto beans, drained
Corn cut from 2 cobs, or 2 cups frozen corn
1 bell pepper, cut bite size (about 1 1/2 cup)
1/3 cup cilantro, chopped
Preparation
1. Mix all but the dressing ingredients in a large bowl
2. In a small bowl, mix the dressing ingredients
3. Toss cowboy mixture with the dressing and chill
4. Serve with chips, as a topping for tacos, or as a side dish,
