This Red Potato Kale Soup is perfect on those chilly nights! You can even make this easy soup year-round as it is warm, tasty, and full of flavor!
Ingredients
- 1 bunch kale (exclude the spine)
- 2 pounds red potatoes (unpeeled)
- 3 tablespoons Tuscan Extra Virgin Olive Oil (Formally Pasolivo)
- 2 bunches green onions
- 2 tablespoons Pasolivo Herbs de Provence
- Chicken broth
Preparation
- Sauté one bunch finely chopped Kale in Pasolivo Extra Virgin Olive Oil and set aside.
- Cube two pounds of Red Potatoes (unpeeled) and bring to a boil in chicken broth.
- Add two bunches of chopped Green Onions. When potatoes are tender, mash about half of them and then add Kale and Herbs de Provence.
