Perfectly moist with melted chocolate, what could be better? This cake is a great dessert and an equally great midmorning or after school snack.
Ingredients
- 6 tablespoons Pasolivo Cucina Olive Oil
- 2 eggs
- 1 1/4 cups brown sugar
- 1 teaspoon vanilla extract
- 1/2 cup Greek yogurt
- 2 cups flour
- 3/4 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon Pasolivo Kosher Flake Sea Salt
- 1 1/2 cup very ripe mashed bananas (approximately 3 medium bananas)
- 1/2 cup mini chocolate chips
- 3 cups powdered sugar
- 1/2 cup creamy natural peanut butter
- 1/3 cup milk, plus more if needed
- 1 1/2 teaspoons vanilla
- 1/4 teaspoon salt
- Ripe banana (not overly ripe), sliced
Preparation
- Oil and flour two 8" round cake pans.
- Using a mixer, beat eggs and brown sugar together until light in color. Add Pasolivo Cucina Olive Oil, vanilla extract and Greek yogurt. Mix well.
- In a separate bowl, whisk all dry ingredients together. Alternately add dry ingredients and mashed banana into wet ingredients. Stir in chocolate chips.
- Pour into cake pans and bake until toothpick inserted in center comes out clean, approximately 20-25 minutes.
- Cool on cooling racks. When cake is completely cool, mix all frosting ingredients with mixer.
- Place cooler layer on a plate, spread a layer of frosting on top, then layer of fresh banana. Place second layer on top first, and spread frosting on top and around the sides.
