Full Product Description
Made with California extra virgin olive oil, this is a perfect breakfast, entree, snack, or holiday meal and was traditionally created around Hanukkah. You can always add sour cream or onion for additional taste.
Ingredients
- 4 Russet Potatoes, about 2 ½ pounds, peeled and grated
- 2 eggs
- 2 tablespoons Pasolivo Lemon Olive Oil
- 1/2 cup flour or matzo meal
- 1 1/2 teaspoons Pasolivo Pacific Blue Kosher Sea Salt
- 1-2 teaspoons Pasolivo Herbs de Provence
- 1/4-1/2 cup Pasolivo Rosemary Olive Oil or Pasolivo Tuscan Extra Virgin Olive Oil (Formally Pasolivo) for frying
- 1 tablespoon Pasolivo Tangerine Olive Oil or Pasolivo Citrus Olive Oil
- 4-6 apples, peeled, cored, and diced
- 1 teaspoon Pasolivo Sugar and Spice Blend
- 2 tablespoons water
Preparation
- Grate potatoes by hand or in a food processor and plate in a large bowl.
- In the bowl with potatoes, add the eggs, Pasolivo Lemon Olive Oil and mix with your hands or two large spoons until combined. Sprinkle with flour or matzo meal, Pasolivo Pacific Blue Kosher Sea Salt, and Pasolivo Herbs de Provence and mix until combined.
- Heat Pasolivo Rosemary Olive Oil or Pasolivo EVOO in a large pan over medium-high heat. Place large spoonfulâ„¢s of mixture in the hot oil and gently flatten out pancakes. Cook until pancakes are nice and crispy brown on both sides and cooked through, about 6-8 minutes total.
- Place on a baking tray lined with paper towels and keep warm in a 200ºF oven until ready to serve.
- With the Spiced Applesauce, place the Pasolivo Tangerine Olive Oil or Pasolivo Citrus Olive Oil and apples in a saucepan and heat over high heat. When they just start to brown, add Holiday Spice Blend and water.
- Stir, cover, and reduce heat to a low simmer. Cover and cook for about 20 minutes, until the apples are tender. Remove cover and continue cooking on a simmer until desired consistency.
