There are endless variations to these crackers. Mix up the
flours or try them with a different Pasolivo Olive Oil!
Ingredients
- 1 1/3 cups all purpose flour, plus extra for working surface
- 2/3 cup stone ground rye flour or stone ground whole wheat flour
- 1 teaspoon Pasolivo Kosher Flake Sea Salt
- 2 tablespoons Pasolivo Lemon Pepper Blend
- 2 tablespoons white vinegar
- 1/2 cup water
- 1/3 cup Pasolivo California Blend Extra Virgin Olive Oil
Preparation
- Preheat oven to 375ºF.
- Measure flours, Pasolivo Pacific Blue Kosher Sea Salt, and Pasolivo Lemon Pepper Blend in a bowl and stir together to blend.
- Add water, vinegar, and Pasolivo California Blend Extra Virgin Olive Oil and stir well to blend.
- Knead until dough is soft and well blended, about one minute. Let dough rest for 10 minutes.
- On a well floured counter, marble slab, or wooden board, roll the dough to 1/4 inch thick. Keeping the bottom well floured, transfer to a baking sheet. Bake for 10-15 minutes until nicely browned and no wet spots are showing. Remove from the oven and let cool on the pan.
- Once cooled, gently break into rustic pieces. Enjoy with your favorite dip, spread, tapenade or by themselves. *Cooking Tip: You can also roll and cut these crackers into squares before baking for a less rustic look.
