What makes these Roasted Vegetables stand out from the rest? We use our Dukkah Seasoning Blend and Curry Powder to add a unique and spicy flare. Feel free to mix and match vegetables in this recipe. This recipe includes butternut squash, onion, yam, parsnips, carrots, and cauliflower. It also incorporates our Pasolivo Classic Extra Virgin Olive Oil (previously named Artisan Blend) that combines a grassy freshness and a peppery finish.
Ingredients
- 1 cup Pasolivo Classic Extra Virgin Olive Oil
- 4 large onions, thinly sliced
- 1 large butternut squash, 1/4 inch julienne
- 1 large yam or sweet potato, 1/4 inch julienne
- 3 large parsnips, 1/4 inch julienne
- 6 carrots, 1/4 inch julienne
- 1 head cauliflower broken into small pieces
- 3 tablespoons Pasolivo Dukkah Blend
- 1 tablespoon Pasolivo Central Coast Curry
- 1 tablespoon cumin
Preparation
- In a small bowl, mix the Pasolivo Dukkah Blend, Central Coast Curry and cumin.
- Put all of the ingredients in a large bowl and mix well.
- Pour onto two 18 by 13 sheet pans and spread evenly to cover the pans. Roast for 12 minutes or until tender and some edges are crisping and caramelizing.
