Combine the Orange Blossom Honey and two tablespoons of water in a small bowl. Microwave for 10 seconds or less, just to melt the honey. Stir to dissolve.
Combine a quarter ounce honey syrup, Aperol, and Habanero Vinegar in a cocktail shaker with ice and shake.
Strain into a white wine glass with ice. Top with Prosecco and a splash of soda water.
