Fresh slices of eggplant roasted in Pasolivo Lemon Olive Oil and seasoned with Smokey Spice Blend and Lemon Salt.

Ingredients
Preparation
  1. Preheat oven to 425°
  2. Cut off stem and slice eggplant in half lengthwise
  3. Lay each half on a cutting board and cut into 1/2 slices crosswise
  4. Lay slices flat on a foil lined, rimmed baking sheet
  5. Sprinkle eggplant with 1 Tbsp. Pasolivo Lemon Olive Oil, 1/4 tsp. Pasolivo Lemon Salt, and 1 tsp. Pasolivo Smokey Spice Blend
  6. Flip slices over and repeat
  7. Roast for 15 minutes, flip, and roast an additional 15 minutes, until tender and browned
  8. Add additional Pasolivo Lemon Salt to taste, if desired
  9. Serve immediately
