Full Product Description
Fresh slices of eggplant roasted in Pasolivo Lemon Olive Oil and seasoned with Smokey Spice Blend and Lemon Salt.
Ingredients
- 1 lb eggplant
- 2 Tbsp. Pasolivo Lemon Olive Oil, divided use
- 1/2 tsp Pasolivo Lemon Salt, divided use
- 2 tsp Pasolivo Pasolivo Smokey Spice Blend, divided use
Preparation
- Preheat oven to 425°
- Cut off stem and slice eggplant in half lengthwise
- Lay each half on a cutting board and cut into 1/2 slices crosswise
- Lay slices flat on a foil lined, rimmed baking sheet
- Sprinkle eggplant with 1 Tbsp. Pasolivo Lemon Olive Oil, 1/4 tsp. Pasolivo Lemon Salt, and 1 tsp. Pasolivo Smokey Spice Blend
- Flip slices over and repeat
- Roast for 15 minutes, flip, and roast an additional 15 minutes, until tender and browned
- Add additional Pasolivo Lemon Salt to taste, if desired
- Serve immediately
