All estate grown olives, tended for and harvested at our ranch on the California central coast. All handpicked and cold-pressed within hours of picking to ensure the fullest, most robust flavor and the highest level of heart-healthy Polyphenols. All hand-blended by our Master Blender and small-batch bottled on site so you know you are getting the healthiest, freshest olive oil possible.

We never use machinery that could damage the olives during picking. This ensures we get maximum flavor, maximum health benefits, and a richer oil. We believe in honoring the land that produces the trees and olives we harvest to create our award-winning olive oils and practice sustainable farming techniques. Only the oil from first pressing of the olives is used by Pasolivo. The remaining water and olive paste is then recycled and returned to earth and the grounds around our ranch to further nurture the soil.
