These soft, honey-kissed cupcakes are made with Pasolivo Classic EVOO, Orange Blossom Honey, and a touch of Kosher Flake Sea Salt for the perfect balance of sweet and savory. Topped with luscious pink frosting and festive Valentine’s sprinkles, they’re a delightful treat for your Galentine’s gathering.
Ingredients
Cupcakes:
- ½ cup milk
- ½ cup Pasolivo Classic Extra Virgin Olive Oil
- ¼ cup Pasolivo Orange Blossom Honey
- 2 large eggs
- 1 teaspoon pure vanilla extract
- ¾ cup granulated sugar
- 1 ¾ cups all-purpose flour, sifted
- 1 teaspoon baking powder
- ½ teaspoon Pasolivo Kosher Flake Sea Salt
- 1 teaspoon pink gel food color, or more for desired pink color
- 1/2 cup unsalted butter, room temperature
- ½ teaspoon Pasolivo Kosher Flake Sea Salt
- ¼ cup Pasolivo Orange Blossom Honey
- 2 ½ cups powdered sugar, sifted
- 1 teaspoon pure vanilla extract
- 1 teaspoon pink gel food color, optional Valentine’s Day-themed sprinkles
Preparation
Cupcake Directions:
- Preheat oven to 350 F degrees. Line a 12-muffin tin with pink paper baking liners.
- In a large bowl, whisk together the milk, Pasolivo Classic Extra Virgin Olive Oil, Pasolivo Orange Blossom Honey, eggs, and vanilla extract with a hand mixer.
- Add the sugar and whisk till combined.
- Add the sifted flour and baking powder. Mix just until no large lumps of flour remain.
- Gently mix in the pink gel food color until the desired color is reached and all the batter is pink.
- Divide the pink cake batter evenly between the prepared muffin tin, filling each one ⅔ of the way full. Make sure to not overfill the liners.
- Bake for 15-18 minutes or until a toothpick inserted into the cupcake comes out clean.
- Remove the cupcakes from the oven and transfer them to a wire rack to cool off completely; about 10 minutes.
- Place the softened butter, Pasolivo Orange Blossom Honey, and Pasolivo Kosher Flake Sea Salt in a large bowl with a hand mixer to in the bowl of a hand mixer with a paddle attachment. Beat on medium speed until well combined, about 30 seconds.
- Slowly add the powdered sugar and vanilla to the butter mixture.
- Turn the hand mixer or stand mixer to high speed and beat for 1-2 minutes, or until the frosting is light and fluffy. You can add pink gel food color if desired.
- Transfer the frosting to a piping bag fitted with your choice of tip and frost the cupcakes as desired. Add some pink or Valentine’s Day-themed sprinkles on top.
