Full Product Description
These smashed potatoes are crispy-crunchy on the outside and soft and creamy on the inside. This will be your new favorite way to cook potatoes!
Ingredients
- 1.5 lbs. small Yukon Gold potatoes, about 12 to 14
- Pasolivo Kosher Flake Sea Salt
- 3 Tbsp. Pasolivo Red Jalapeno Olive Oil
- 2 Tbsp. Pasolivo Savory BBQ Rub
- 1 Tbsp. chopped parsley (optional)
Preparation
- Place the potatoes and 2 Tbsp. Kosher Flake Sea Salt in a large pot and fill with water, an inch above the potatoes. Bring to a boil then reduce to a simmer. Let cook until fork tender, about 20 to 25 minutes.
- Drain, then return the potatoes to the pot. Dry the potatoes out over low heat for a minute or so then move them to a parchment-lined sheet tray.
- Toss them in 1 Tbsp. Red Jalapeno Olive Oil. Using the bottom of a flat glass, smash the potatoes into a thin layer. Drizzle with the remaining 2 Tbsp. Red Jalapeno Olive Oil and sprinkle with Savory BBQ Rub.
- Bake for 40 to 45 minutes, until golden brown and crispy. Sprinkle with parsley (if using), then you're ready to serve! These potatoes make a great side dish for any hearty protein or serve them as an appetizer with a side of ranch. Enjoy!
