Full Product Description
Perfectly crisp and flavorful zucchini fritters made with Pasolivo Lemon Olive Oil.
Ingredients
- 2 1/2 Tbsp. Pasolivo Lemon Olive Oil, divided use
- 3 cups shredded zucchini, squeezed dry
- 1 Tbsp. minced jalapeno
- 1/3 cup chopped onion, or green onions
- 2 Tbsp. chopped fresh cilantro
- 1 egg, lightly beaten
- 1/2 tsp. Pasolivo Lemon Salt
- Several grinds freshly ground pepper
Preparation
- Mix 1 Tbsp. Pasolivo Lemon Olive Oil with remaining ingredients
- Warm remaining 1 1/2 Tbsp. Pasolivo Lemon Olive Oil in large fry pan, over medium heat
- Scoop 1/4 cup zucchini mixture into the fry pan and flatten lightly
- Cook about 3-4 minutes until lightly browned. Flip and cook until browned and lightly crispy. Check them often so they don't get too browned
- Serve immediately
