Here at Pasolivo, harvest is one of the most exciting times of the year! This process only happens once a year and lasts anywhere from 2-3 weeks. If you have ever wondered how olives get turned into olive oil, we have all of the equipment and tools needed for this process at the Pasolivo Ranch. All of our olives are grown, picked, and milled on-site and we do not use any chemicals or heat which is required of true extra virgin olive oil. The first step in this process is picking the olives. Here at Pasolivo, we have over 6,500 olive trees on our property and 11 different olive varieties. Every day we have a minimum of 80 people hand-picking. Olives are moved by tractor to the mill where they are unloaded into the hopper. The olives are lined up and ready to be milled Bins of olives are transferred from the olive trees to the mill The hopper is a machine that helps to separate the leaves from the olives. This is the cleaning process where stems, leaves, twigs, and debri are removed. The olives go through the hopper and then are then washed with water to remove dirt and pesticides. A tractor moves a bin of olives to the hopper The olives are dumped into the hopper which will help rid the olives of debri, stems, and dirt The olives are cleaned and washed of stems and debri The olives are then given a "bath" before turning into paste The final cleanse before the olives get turned into oil The olives are ground into an oatmeal-like paste. If you weren't able to join us, we were the Title Sponsor and provided visitors with a complimentary tasting of our products. Our booth consisted of our award-winning olive oil, olive wood products, seasonings and salts to pair with our olive oil, tea towels, vinegar's, and bath and body products. The Olive Festival offered more than one hundred olive-related products. Right by our booth there was live music, the weather was absolutely amazing, and it was great to meet so many people! This family-friendly event included samplings, a mobile olive oil press, olive oil ice cream, and a cooking contest. Perfect for Easter: Healthy and Simple Recipes the Whole Family Will Enjoy

With Easter quickly approaching, we want to make your menu as simple and healthy as possible. Setting aside just a few hours, you can enjoy some of your favorite Pasolivo products in these delicious Easter recipes. Yogurt and Citrus Olive Oil Chicken Yogurt and Citrus Olive Oil Chicken with Roasted Potatoes The Yogurt and Citrus Olive Oil Chicken is a healthy option with a sweetness that is delivered through the lemon juice, yogurt, and the Pasolivo Citrus Olive Oil. In a medium bowl, mix together the following: ½ cup nonfat Greek style yogurt, four cloves garlic (crushed), one tablespoon fresh lemon juice, salt and pepper, and two tablespoons Pasolivo Citrus Olive Oil. Add four chicken cutlets to the mix and turn to coat. Refrigerate for at least 30 minutes and up to two hours. Heat one tablespoon of Pasolivo Citrus Oil in a large skillet over medium heat. Wipe the excess marinade off of the chicken and cook until golden brown and cooked through (about four minutes per side). Alternately, you can grill them as well. Egg, Asparagus, and Cheese Frittata The Egg, Asparagus, and Cheese Frittata is a healthy addition to an Easter meal. Taking less than an hour to make, this Frittata will be one that guests will be talking about for days to come. Preheat oven to 350 degrees F. Sauté or roast asparagus in two tablespoons of Pasolivo Extra Virgin Olive Oil (EVOO) until tender. In a mixing bowl, combine 18 large eggs, one to two teaspoons of Pasolivo Truffle Sea Salt and pepper to taste. Mix with a fork until combined. Add one large bunch of Asparagus (tough ends snapped off and cut into one to two inch pieces) and eight ounces of feta or goat cheese crumbles to mixture and mix until combined. Brush...
