Gourmet and Healthy Extra Virgin Olive Oil Gifts for Clients, Coworkers, Friends or Family
As 2022 begins, how many of us are making plans to be healthier? I know I am, but how? There are many ways we can increase our health this year. Some of them seem way harder than others, like running a marathon or maybe goat yoga. While these are both great ideas, I suggest that we all start with something a little bit easier. Add more quality olive oil to our diet. For the fifth year in a row, the Mediterranean diet ranks as the best overall diet according to U.S. News & World Report. If you don’t already know, the main component of the Mediterranean diet is extra virgin olive oil. Now I don’t know about you, but I would love to add a good olive oil to my diet and finish the year healthier than I started. (Maybe I can add in the marathon and the goat yoga next year. 😊 ) Be careful though when purchasing the extra virgin olive oil for your new health plan. There is a difference between olive oil and extra virgin olive oil. If you want the health benefits, there is certain criteria you need to look for. A true extra virgin olive oil will be polyphenol rich and have a high polyphenol count (over 400). These polyphenols in the oil are micronutrients that are found in plant foods. These micronutrients are believed to improve cardiovascular health as well as cognitive function. The main polyphenol found in EVOO (extra virgin olive oil) is oleocanthal. Another way to ensure that your olive oil is healthy is to buy oil that is certified by the California Olive Oil Council (COOC). In order for an oil to be certified, it must first pass a few rigorous tests. The oil must be below .5 percent acidity...

5 Most Frequently Asked Olive Oil Questions
As Pasolivo’s Olive Oil Sommelier, I am asked many questions when it comes to all thing’s olive oil related. I thought it would be helpful to share the top 5 questions that have been asked lately and provide my expert answers! How to choose real extra virgin olive oil? With so much fraud in the olive oil industry it can be extremely difficult for consumers to decide which extra virgin olive oils are real. Many olive oils on the shelves are labeled as extra virgin but are not. The FDA unfortunately does not have heavy regulation on what is being imported and sold in the grocery stores in the United States. Some key things to look for to make sure you are getting a real high quality EVOO are: Is the olive oil you are purchasing certified extra virgin? Most producers who make high quality extra virgin olive oil, take the additional steps to get it certified. The California Olive Oil Council certifies most California extra virgin olive oils, but there are also the International Olive Oil Council for International oils, and a few other approved organizations for certification. Some extra virgin olive oils will have their certification on the packaging, but some producers choose not to include this because the seals design change frequently. You can usually look on the websites of the places that certify extra virgin olive oils to find whether the oil you are looking to purchase is certified. Does the oil have a Harvest or Best by Date? Many oils will list the bottling date, but this tells the consumer nothing about when the oil was produced. You typically want to consume high quality EVOO within two years of the harvest date to ensure ultimate quality. Some award- winning extra virgin olive oils can go...

Where Does Pasolivo Olive Oil Come From?
The new year has just begun and with this fresh start often comes new resolutions. Maybe you plan on consistently going to the gym, starting your own passion project or side hustle, or maybe you simply want to make healthier choices when fueling your body. While the health benefits of consuming extra virgin olive oil (evoo) are unmatched, not all olive oil is created equal. This raises the question, “Where does olive oil come from, and more specifically, where does Pasolivo’s Olive Oil come from?” At Pasolivo we are committed to creating high quality extra virgin olive oil from olives that are sustainably farmed in Paso Robles, California. Studies have shown that up to 70 percent of “extra virgin olive oil” sold on shelves today does not comply with U.S. Department of Agriculture standards. We do not compromise on quality or taste which is why our olives are cold pressed only hours after being picked. This results in true evoo that has only been extracted once and contains the health benefits many consumers are looking for. So, the next time you cook a meal, try incorporating a tablespoon of Pasolivo Classic Extra Virgin Olive Oil for a peppery finish to your favorite home cooked meal or even drizzle some of our award-winning California olive oil on top of a fresh garden salad. Not only will you reap the health benefits from our oils’ free radicals and anti-inflammatory properties, you will also feel confident knowing exactly what you are consuming and how our oil was created. What does “bottled by” mean? When you walk into grocery stores looking to purchase the best olive oil there are countless options to choose from. While some find comfort perusing the aisles and taking their time looking at new products and brands, others simply do...

How is Flavored Olive Oil Made?
Olive oil is an essential ingredient for cooks, but flavored olive oils are a newer option that can add a whole other dimension of depth and flavor to food. There are three ways to make flavored olive oil: co-milled, infused, or via oil-to-oil blending. At Pasolivo, we use nothing but the freshest, natural ingredients to create our award-winning oils. A number of our flavors are made by co-milling - meaning the olives and the herbs (like our Basil Olive Oil) go through the olive press together. For other flavors, we opt for naturally extracted oils (such as oil from the zest Meyer lemons and Persian limes) and combine that with our extra virgin olive oil olive to create its unique flavors. In this week’s blog, we’ll explain the three ways flavored olive oils are made and how to cook with them. Co-Milled Olive Oil First-of-all, there are several factors that influence the quality of extra virgin olive oil (EVOO), including when the olives are harvested, how they’re picked and how fast the olives get to the mill. At Pasolivo, we hand-pick our olives to prevent imperfections or damage from machinery. We also have a mill on-site, which means everything gets processed within hours of picking to ensure the highest quality. When it comes to flavored oils, each blend starts with our freshly picked olives. From there, we combine in natural ingredients - with no artificial flavorings or preservations. During last year’s harvest, we added 1,200 pounds of fresh red jalapeños into the mill along with the olives to give this oil its fiery kick. Once the oil separates from the paste, all those flavors commingle into one delicious flavored olive oil. We use the same process for our garlic and basil olive oils. Infused Olive Oil Infused olive oil is...
